Inspired Spiralizer

This week’s favorite was something I had been looking for ever since I started eating raw. While I was home in Orange County for the holidays last year I managed to find a vegetable spiral slicer at Williams Sonoma. Unfortunately, they were sold out at the time. However, the manager had purchased one for herself and she offered to give hers to me as long as I came back and picked it up on her break! How amazing is that service? Luckily when I went back they had more in stock so we both lucked out.

The vegetable spiral slicer makes spiralized noodles from your vegetables. I have only used zucchini to make pasta but you can use beets, carrots, cucumbers, pears, pretty much any fruit or veggie you could think of. The first time I actually used the spiralizer I was so hooked and excited that my mom even jumped in wanting to try. Yes, its that fun! Not to mention the presentation is just beautiful.

When I prepare my meals I typically don’t use recipes. Instead, I find myself assembling a bunch of ingredients together. I highly suggest you experiment and try different variations. Even if you still use your store bought sauces and dressings, add zucchini pasta to your salads and dishes. Its an easy way to get your serving of vegetables in for the day. For this post I will include my favorite way to prepare my raw pasta and you can add/remove anything to your liking.

Raw Zucchini Pasta with Red Sauce:

Ingredients-

2 medium-large zucchinis spiralized

Sauce-

2 cups chopped tomatoes

1 cup sun-dried tomatoes soaked in water

1 cup fresh squeezed orange juice

1/4 avocado

2 pitted medjool dates

Spices/herbs to your liking (I like medium heat chili powder and Italian herbs)

 

Simply blend sauce ingredients in blender or food processor and add on top of your raw spiralized zucchini! Enjoy!
